Ingredients;
Rava – 200 gms
Grated Lauki/ Dudhi – 1/2 cup
French Beans (finely chopped) – 1/4 cup
Boiled Corn Kernels – 1/4 cup
Grated Carrot – 1/4 cup
Onion (finely chopped) – 1 large
Oats powder – 1/4 cup
Grated Potato- 1/2 cup
Curd -1/2 cup
Peanuts -2 tbsp
Haldi/Turmeric -1/2 tsp
Sugar- 1/2 tsp
Kashmiri lal mirch- 1 piece
Sesame Seeds -1 tbsp
Green Chillies finely chopped- 2 pieces
Ginger paste- 1 tsp
Coriander Leaves chopped – 1/4 cup
Lemon juice-1 tsp
Eno/Fruit Salt -1 tbsp
Oil for tempering – 2 tbsp
Cumin seeds – 1 tsp
Mustard Seeds – 1 tsp
Curry Leaves
Salt as required
How to make Rava Handvo- Savory Cake

Soak rava in curd for half an hour. After half an hour add green chilli, ginger paste, salt, grated lauki/dudhi, grated potato, grated carrot, onion, capsicum, french beans, boiled corn kernels, peanuts, chopped cilantro, haldi/turmeric, sugar, lemon juice and mix well and leave for 15 mins.

For tempering switch on gas and in a tempering vessel add oil, sesame seeds, kashmiri lal mirch, mustard seeds, cumin seeds and curry leaves and once the seeds splutter switch off the gas and add this tempering to the above prepared rava mixture.

Taste the mixture and add salt if required. Now add eno and mix.

In a non stick wok switch on gas and add 1 tbsp oil and let it became warm. Once warm add the rava mixture as prepared above and cover the wok.

Let it cook for 15 minutes and then check. The base of the mixture will have formed a crust turn it over and let the upper side cook for 5 mins.

Both the sides will be cooked having a crispy crust while the inside will be soft.

Serve hot with green chutney and sauce.
My Tip:
If u want to avoid eno you can add soda bi carb 1 tsp to the mixture. You can use traditional handvo vessel if you have one
