Hello! If you have some rotis leftover this is the perfect recipe for you. These quesadilla’s are made with a desi twist and easily available homemade ingredients. So lets get cooking….
Leftover roti – 4
Boiled potatoes – 2 large
Onions (finely chopped) – 2 medium
Green peas (boiled) – 1/2 cup
Cheese (grated) – 1/4 cup
Cheese – 4 cubes
Fresh coriander leaves (finely chopped) – 1/4 cup
Aloo bhujia sev (semi crushed) – 1 cup (the red one which is spicy and tangy, not the white one)
Kashmiri red chilly powder – 1 tbsp
Cumin Powder – 1 tsp
Coriander powder – 1 tsp
Amchur powder – 1 tsp
Garam masala powder – 1 tsp
Ginger-green chilly paste – 2 tsp
Salt as per taste
Green chutney for applying on roti
Ketchup for serving
Chat Masala powder for sprinkling
Onions (sliced fully round) – 2 medium
Garlic and herbs butter for greasing
1) In a bowl take the boiled potatoes, green peas, finely chopped onions, coriander leaves, grated cheese, semi crushed aloo bhujia sev, kashmiri red chilly powder, cumin powder, coriander powder, amchur powder, garam masala powder, ginger-green chilly paste and salt and mix and mash all of it together to form a filling. Cover and keep aside for 5 minutes for all the spices to mix well.
2) Take one roti. Apply green chutney on the entire roti generously. On one side of the roti apply the filling, as prepared above, and the other side place the sliced onions. Now sprinkle chat masala powder on the entire roti. Grate one cheese cube on the roti. Now fold the roti in a semi circle shape.
3) Take a non stick tava. Apply the garlic and herbs butter on both the sides of the roti and cook it on the tava till crisp from both sides. Serve hot with ketchup.
