Hariyali Pav Bhaji

Hey guys! Are you tired of the regular pav bhaji and do you want to feed your family some vegetables, then try out this extremely delicious hariyali pav bhaji which is extremely easy to make and you can make this for guests also as a change from the regular pav bhaji. So lets get cooking…

Ingredients:

  • Broccoli – 250 grams
  • French beans/Fanasi – 150 grams
  • Green peas/Vatana – 150 grams
  • Potatoes – 4 medium
  • Palak/Spinach – 1 big bundle
  • Capsicum – 3 medium
  • Spring Onions – 4 medium (with the green stem)
  • Coriander leaves – 1 cup
  • Ginger – 1 inch
  • Garlic – 5 to 6 cloves
  • Green chillies – 3 (if using spicy one and 4-5 if using the lighter green one)
  • Tomatoes – 2 small
  • Roasted cumin powder – 2 tsp
  • Dhania powder/Coriander powder – 2 tsp
  • Pav bhaji masala – 1 and 1/2 tbsp
  • Lemon juice – 2 tbsp
  • Salt as per taste
  • Ghee and oil each 1 tbsp
  • Butter – 2 tbsp
  • Paneer (finely chopped) – 100 grams
  • Cheese grated for garnishing
  • Asafoetida/Hing – 1/4 tsp
  • Cumin seeds/Jeera – 1 tsp

Method:

1) Boil green peas, french beans and potatoes together in a pressure cooker. After boiling mash it and keep it aside. In a bowl take enough water and bring it to boil. Once it boils add the palak, coriander leaves, ginger and garlic to this and let it boil for 2 minutes.

2) After 2 minutes take out the palak mixture and to the same water add the broccoli and let it boil for 2 minutes (you can add more water if it feels less). Strain it and mash it.

3) Take the palak mixture and puree it in a mixer. Similarly make a paste of the green chillies. Finely chop the spring onions and tomatoes (preferably in a chopper). Roast the capsicum on the gas and finely chop them and keep aside.

4) In a wok take the oil and ghee and let it become warm. Now add the hing and cumin seeds and let it crackle. Now add the green chilly paste, capsicum and onions and let them cook for 2-3 minutes till soft. To this add the tomatoes and then add the coriander powder, cumin powder, pav bhaji masala and little salt and let it cook for 5 minutes till the mixture leaves oil.

5) Now add the palak puree to this and mix it all well and again add a little salt. (Add salt step by step for better results). Finally add the mashed mixture of beans, green peas, potatoes and broccoli and mix it all well. Again add salt to this. Add water to adjust the consistency. Mash all of this together and keep adjusting the salt and water consistency as required.

6) Now add the finely chopped paneer (you can grate the paneer and add it also but I love the chunky texture hence I have chopped it) to this and mix it well.

7) Finally add the lemon juice and butter and mix it well and switch off the gas. Serve hot with buttered pav and garnish with grated cheese.

  3. Hariyali pav bhaji looks absolutely delicious. I am surely going to try it out soon, Shail. But somehow I don’t like Broccoli. Can I substitute anything with that?

    1. Yes you can use regular flower gobi or bottle gourd also or you can altogether omit it. Though I would suggest to try it out you won’t realise there is broccoli in it.

  20. I am drooling over your recipe Shail! Staying abroad I miss all these yummy, mouthwatering dishes. This hariyali version of pav bhaji is doable for me as the supermarkets are loaded with broccolis and spinach.
