Aloo palak/Spinach (without gravy)
Hey guys! I have posted a recipe for Aloo Palak before but that was with gravy. This recipe is dry vegetable recipe. It is very basic recipe which can be made by anyone and using very simple ingredients. You can easily make this vegetable for tiffin early mornings and it tastes really good. This is a no hassle and easy to make recipe. Lets get cooking….
Ingredients:
Palak/Spinach – 200 grams
Boiled Aloo/Potato – 4 medium sized
Turmeric Powder/Haldi Powder – 1 tsp
Red Chilli Powder – 1 tsp
Coriander Powder – 1 tsp
Cumin Powder – 1 tsp
Ginger paste – 1/2 tsp
Garlic (finely chopped) – 2 tsp
Green Chilly (finely chopped) – 1 tsp
Cumin Seeds – 1 tsp
Mustard Seeds – 1 tsp
Oil – 1 tbsp
Water – as required (approx 2 cups)
Asafoetida/Hing – 1/4 tsp
Lemon Juice – 1 tbsp
Salt as per taste
Method:
1. Finely chop the palak. Chop the aloo. In a wok take the oil. Add the asafoetida and mustard seeds. Once they crackle add the cumin seeds. Now add the ginger paste, green chilly and garlic. Saute till garlic is almost brown.
2) Now add the finely chopped palak. Add water in the palak so that palak is completely Submerged. Now add the turmeric powder, red chilli powder, coriander powder and cumin powder to the palak. Cover and let it cook for 10 minutes till palak becomes soft.
3) Now add the salt and chopped potatoes. Add some water again at this stage and cook again (without covering) till all the water is evaporated. Finally add the lemon juice. Mix it all well and switch off the gas. Serve hot with roti/paratha.

You know as a child I was a super fussy eater and I insisted on eating meat with everything! My mother made a version of aloo palak with diced cubes of mutton in it! It’s been years since I ate that, but you did trigger some awesome memories!
