Masala Bhakri

Hey guys! The recipe I am posting today is a gujrati bhakri recipe. Usually we gujjus make bhakri with sabji/vegetable. I have made Masala Bhakri which can be eaten as a breakfast dish. For making bhakri you need a special lodhi/pan which is made of mud and is easily available in any vessel selling store or Amazon. Lets get cooking then…

Ingredients:

Wheat Flour – 2 cups

Turmeric Powder – 1/2 tsp

Ginger Paste – 1 tsp

Green Chili paste – 1 tsp

Red chili powder – 1/2 tsp

Cumin-Coriander powder – 1 tbsp

Fresh Fenugreek (finely chopped) – 1/2 cup

Sesame Seeds (White and Black) – 1/2 cup

Cumin Seeds – 2 tbsp

Oil – 2 tbsp

Salt as per taste

Water as required (approx 1 cup)

Ghee/clarified butter for greasing

Method:

1) In a bowl sieve the wheat flour. To this add all the remaining ingredients except water and mix it well. Make it into a crumbly dough.

2) Now add the water little by little and make a hard dough (the dough should be tighter than paratha dough also). It is very essential to keep the dough hard as bhakri texture needs to be like a hard to cook but soft to chew. It will have a thin biscuit like texture.

3)Make roundels out of the dough (approx 5-6). Roll out into round discs/thick rotis. Do not use flour to roll. Roll all the balls in similar fashion and keep aside

4) Take the lodhi/pan. Let it become warm on medium flame. Once warm place one bhakri on it. Let it slightly cook on lower side then flip. Let the other side cook properly. Then flip again and let it cook. Both sides once cooked grease the bhakri with ghee and take it off the gas. Cook all bhakris in similar fashion. Eat it while warm.
