Aloo Paratha

Hey guys! Hope you all doing good. The recipe I am posting today is a very simple and easy to make breakfast recipes which is very much famous and prepared more in the Northen part of India. Stuffed with aloo and served hot with makhan/butter, this paratha is so soft and tasty. This is made in many houses as a breakfast recipe. Ingredients:

For stuffing:

Aloo/Potato (boiled) – 5 medium

Fresh coriander leaves (finely chopped) – 1/2 cup

Ginger paste – 1 tsp

Green chillies (finely chopped) – 2 chillies

Red chilli powder – 1 tsp

Sugar (powdered) – 1/2 tsp

Lemon juice – 2 tsp

Garam masala powder – 1 tbsp

Anardana powder – 1 tsp

Salt as per taste

For dough:

Wheat flour – 2 cups

Salt – 1/4 tsp

Oil – 2 tsp

Water for kneading

Method:

For Stuffing:

In a bowl take the boiled potatoes and mash them. Now add all the remaining ingredients for stuffing and mash and mix it well. Cover and keep aside for few minutes for the masalas to come together.

For Dough:

In a bowl take the flour, salt and oil and mix it all together. Now using water knead into a soft dough. Cover with a cloth and keep aside the dough for few minutes.

Parathas:

1) Make balls out of the dough (Approx 8). Roll one of the balls using rolling pin to about 4 inches circle. Add the stuffing prepared in the center of the circle and fold the outer edges of the dough together and seal the stuffing. Now using your finger slightly press and roll the paratha to spread the stuffing bit evenly into a circle.

2) Heat a non-stick tawa (griddle) and cook the paratha using ghee until golden brown spots appear on both the sides on medium flame. Serve hot with ketchup or dahi or as I have served with the gravy of chole and a sallop of makhan or butter on top.
