Paneer Tikka Pizza

Hey!! Tandoori Paneer is one of the most loved recipes and when combined with pizza it is one of the favorite combination for any vegetarian. Tandoori paneer is made by marinating it in a paste of curd and grilling it till charred lightly. For giving it the smoky taste activated charcoal is used. The recipe I have today is without using charcoal and griller. It is a very basic recipe and can be prepared by any one using basic ingredients. The base I have used is ready made. Ingredients:

For Pizza:

Readymade Pizza Base – 3-4

Mozzarella Cheese – 150 grams

Processed Cheese – 75 grams

Oregano – 3-4 tsp

Chilli Flakes – 3-4 tsp

oil for greasing

For Paneer Tikka:

Paneer/Cottage Cheese – 250 grams

Onion – 1 large

Tomato – 1 large

Capsicum- 1 medium

Hung Dahi/Curd – 100 grams

Kashmiri Red Chilli Powder – 1 tsp

Ginger- Garlic Paste – 1 tbsp

Turmeric Powder – 1/2 tsp

Cumin-Coriander powder – 1 tsp

Tandoori Masala/ Garam Masala – 1 tsp

Dry Mango Powder/Amchur Powder – 1/2 tsp

Salt – 1/2 tsp

Oil for greasing

For Tikka Sauce:

Boiled Tomato – 1 large

Garlic cloves – 3-4

Kashmiri Red Chilies – 3 pieces

Lukewarm Water – 1/2 cup

Onion (finely chopped) – 1 small

Oil – 1-2 tsp

Salt  – 1/2 tsp

Tomato Ketchup – 1 tsp

Method:

For Paneer Tikka:

1) Chop the capsicum, onion, tomato (after de-seeding) and paneer into cubes/dice shape.

2) In a mixing bowl take the hung dahi/curd (the curd should be tied in a muslin cloth and hung for few hours til all the water is drained). In this add the ginger-garlic paste, red chilli powder, turmeric powder, cumin coriander powder, tandoori masala/garam masala, dry mango powder and salt and mix it well.

3) Now add the chopped onion, tomato, capsicum and paneer in this curd mixture and coat all of them properly. This is marination. Leave it aside for half an hour to one hour till it absorbs all the marination.

4) Take a non stick pan and grease it with 1 tbsp oil. Let it become warm. Now add the marinated paneer, onion, capsicum and tomato pieces on to the pan. Let it cook from one side till brown. Then turn it on other side and let it turn brown. Do not burn it. Keep aside or if you have a grilling pan then take the paneer, capsicum, onion and tomato pieces in a skewer and grill it.

For Tikka Sauce:

1) De-seed the kashmiri red chilies and soak them in lukewarm water for 15-20 minutes.

2) After 15 minutes make a paste of the kashmiri red chilies, boiled tomato and garlic cloves.

3) Take a wok add the oil. Let it become warm then add the chopped onions and saute till light brown. Add the tomato chilli paste as prepared and cook on medium flame till it becomes thick and oil separates.

4) Add the ketchup and salt and mix it well. Switch of the gas and let the sauce cool down.

For Assembly:

1) Take one base and apply the tikka sauce on one side. Grate some processed cheese on the sauce. Add the topping of paneer tikka. Now sprinkle grated mozzarella cheese on top. Sprinkle some oregano and chilli flakes.

6) Take a non stick flat pan/tawa. Apply some oil on it. Place the above prepared pizza on it and cover it. Let it cook on low flame for 10 minutes till the cheese melts and the base turn little crisp.

7) Serve hot with ketchup and seasoning.
