Rice Kheer

Hey all!! The recipe I am posting today is Rice Kheer which is a sweet dish. You can have it as an accompaniment with your main course which is the way we normally have it or you can have it as dessert. I have it chilled but you can have this kheer warm also. It is very simple and easy to make it and it is so yummy you wont be able to stop at one bowl. Rice Kheer is very popular sweet dish in many households since it is simple and easy to make most of us opt to have this as a sweet dish if any guests are coming over. It is liked by all age groups and is a popular choice with puri and chana bhaji. So lets get eating…

Ingredients:

Milk- 1 1/2 liters

Basmati Rice – 3/4 cup (if you do not have basmati rice take any other rice rice the measurement stays the same)

Sugar – 3/4 cup

Rose Water – 2 tbsp or Rose Essence – 1 tsp

Kesar Strands- a few

Elaichi/Cardamom Powder- 2 tsp

Chopped mixed nuts (Almonds and Cashews) – 1/2 cup

Water for soaking

Method:

1) Soak the rice for around 20 minutes. Meanwhile in a deep bottomed wide pan (make sure to use a wide pan so that it is easier to stir the milk and the milk does not stick to the bottom) take the milk and let it come to one boil on high flame.

2) Strain the soaked rice after 20 minutes. Once the milk comes to one boil add the soaked and strained rice and let the rice cook in the milk itself. At this stage keep the flame on low or medium if you are comfortable with it. Keep stirring so that the milk and rice do not stick to the bottom.

3) Let the rice cook for 5 minutes then add the sugar and elaichi powder. Keep boiling till the rice is puffed and cooked. This will take approximately 15 minutes. Switch off the gas once the rice has cooked. Add the dry fruits and rose water/rose essence at this stage and give it a mix.

4) Let the kheer cool down to room temperature and keep it in the fridge to chill. Serve chilled or hot immediately as you like.
