Hey guys!!! the recipe I am posting today is a healthy, crunchy and tasty Amaranth Salad. What is Amaranth? Amaranth is what we commonly know as “Rajgira Seeds”. We usually have food items relating to Rajgira during our fasts. Normally the food items are made using the Rajgira/Amaranth Flour. The most common food item using Amaranth seeds is Amaranth/Rajgira Chikki. I have recently joined a forum GoToChef which send me this very thoughtful and healthy gift item of organic amaranth seeds by brand namely “Organic Tattva “. On receiving this gift I was curious on researching Amaranth Seeds as even I was ignorant to the fact that Amaranth is “Rajgira”. Once I researched the same I came to understand that organic Amaranth Seeds are actually more nutritional than the flour that we use and Oragnic Tattva is providing us the same at very affordable prices. There can be many recipes made by using these seeds namely Dal, Kheer, Pattice and Salad. The Amaranth Seeds are easy to cook and look similar to Khus Khus (Poppy) seeds only Amaranth Seeds are slightly larger. They are not quinoa seeds hence do not confuse these two different seeds. This salad can be eaten as a meal in itself. Lets make this simple yet filling and tasty Amaranth salad…
Ingredients:
Amaranth/Rajgira Seeds – 1/4 cup
Red Kidney Beans (Boiled) – 1/2 cup
Iceburg Lettuce – 50 grams
Red Bell Pepper – 50 grams
Yellow Bell Pepper – 50 grams
Zucchini – 50 grams
Green Chilli (finely chopped) – 1 piece
Extra Virgin Olive Oil – 1 tbsp
Apple Cider Vinegar – 1 tsp
Black Pepper Powder – 2 tsp
Oregano – 1 tsp
Chilli Flakes – 1 tsp
Sugar (Powdered) – 1 tsp
1 1/2 cup water
Salt for taste
Method:
1) Soak the amaranth seeds in 1/2 cup water for 15-20 minutes. After 15 minutes boil the amaranth seeds in 1 cup water. This will take around 10 minutes. The seeds will become soft and transparent. Strain the amaranth seeds and drain away any residue water completely.
2) Chop the zucchini, red bell pepper and yellow bell pepper into long julienne. Finely chop the iceburg lettuce into long stripes.
3) In a bowl mix together the olive oil, apple cider vinegar, black pepper powder, oregano, chilli flakes, salt, sugar and red chilli powder.
4) Take a salad mixing bowl and mix together the chopped zucchini, red bell pepper, yellow bell pepper, iceburg lettuce, kidney beans, amaranth seeds and green chilli. Pour in the Olive Oil mixture as prepared above and mix everything using a spatula. Serve immediately or chilled as preferred.
Note: If you do not have extra virgin olive oil and apple cider vinegar you can add the black pepper powder, oregano, chilli flakes, salt, sugar and red chilli powder directly into the salad and top it with lemon juice.
